Stars may travel far, but they never truly leave their constellation. On Sunday, 20 September 2026, Apéritif Restaurant and Pinstripe Bar at Viceroy Bali will bring together a constellation of culinary and cocktail talents for All Stars: The Originals; a one-night celebration of shared beginnings, evolving craft and the creative connections that continue to shape their journeys.

At Apéritif Restaurant, Chef Nic Vanderbeeken and Pastry Chef Dayu will reunite with three former culinary talents who have since carved their own paths across Bali and Jakarta: Chef Arvin of Cure at Regent Canggu, Chef Maxie of Kaum at Potato Head, and Chef Vallian of Kindling Jakarta.

Together, they will create a six-course degustation that reflects the different kitchens, techniques and experiences that have shaped each chef. Rather than a collection of individual signatures, the menu is conceived as a culinary dialogue; bringing together European technique, Indonesian ingredients and each chef’s evolving interpretation of gastronomy.

The menu unfolds through delicate and layered compositions, from the refined interplay of caviar and steamed egg to the richness of King Crab with melted leek and fermented water chestnut. A more distinctly Indonesian character emerges through Slipper Lobster, complemented by soybean, chilli relish, kedondong and garang asem, while Aged Duck brings together beetroot, black sambal and Kintamani orange in a composition that balances depth, acidity and spice.

The experience will be complemented by an optional wine pairing, carefully selected to accompany the progression of the degustation.

The celebration continues at Pinstripe Bar, Viceroy Bali’s 1930s-inspired speakeasy, where the evening shifts from the dining room to a more spirited expression of the craft. Head Mixologist Ferrari will reunite with former Head Mixologist Panji, alongside Borty of Bali Boozy Kitchen C Bar, bringing together three perspectives on modern cocktail culture for an evening of distinctive serves and live DJ energy.

Signature cocktails will be available at IDR 180,000++ each, or two for IDR 300,000++.

More than a guest shift or a one-night collaboration, All Stars: The Originals is a return to shared beginnings. It brings together a group of talents whose paths first crossed at Viceroy Bali, before taking them to different kitchens, bars and creative spaces. For one evening, those paths converge again offering a glimpse not only of where their journeys began, but of how far their craft has evolved.
