The takeover brings together Japanese craftsmanship, carefully selected ingredients, and the distinctive warmth of Balinese hospitality in a setting shaped by the tranquility of Sebatu Valley.

Founded in the heart of Ginza in 2018 by renowned sushi chef Hiroyuki Sato, Hakkoku is rooted in the pursuit of balance—between sushi and rice, chef and guest, and tradition and innovation. Since arriving in Bali in 2024, Hakkoku has continued this philosophy while embracing its island setting, thoughtfully combining imported ingredients with locally source produce, allowing the spirit of Ginza to unfold through the ingredients and sensibilities of Indonesia.

At the heart of Hakkoku Bali is “Indotenashi,” its interpretation of the Japanese philosophy of Omotenashi, infused with the warmth and openness of Indonesian culture. Across nine thoughtfully curated courses, guests will experience this philosophy through a progression of sushi and seasonal creations that reflect the harmony between Hakkoku’s Japanese heritage and its Bali identity.
