Andaz Bali, by Hyatt welcomes Chef Julien Perrinet, Executive Pastry Chef Asia Pacific at Park Hyatt Tokyo, for an exclusive two-day afternoon tea experience on 22 and 23 October 2026, bringing his pastry expertise from Tokyo to the island for a special culinary collaboration.

Hosted at Village Square, Hosted at Village Square, Andaz Bali, by Hyatt’s lively communal space inspired by a traditional Balinese village, the afternoon tea will showcase Chef Julien’s approach to pastry, combining refined technique with carefully selected fruit flavours from Les Vergers Boiron, a French producer of premium fruit purées and preparations.

Known for his work across Asia Pacific, Chef Julien brings a wealth of experience in pastry and dessert creation, with a style that balances precision, seasonality, and the natural character of each ingredient. For this collaboration, he will present a selection of sweet creations developed especially for the two-day experience at Andaz Bali, by Hyatt.

Rather than a traditional afternoon tea, the menu offers guests an opportunity to discover Chef Julien’s interpretation of pastry through a collection of desserts and savoury bites, with fruit taking a central role. The collaboration with Les Vergers Boiron allows the chef to explore a range of fruit flavours while showcasing how they can be transformed into contemporary pastry creations.

For Maximilien Provis, Hotel Manager of Andaz Bali, by Hyatt, collaborations such as this offer guests a chance to experience a different perspective on food and hospitality without leaving Sanur.

Bringing chefs from across the Hyatt family to Bali allows our guests to discover new ideas, techniques, and tastes in a setting that feels distinctly local. We look forward to seeing how Chef Julien translates his experience at Park Hyatt Tokyo into this special afternoon tea, alongside the quality of Les Vergers Boiron,” said Maximilien Provis, Hotel Manager of Andaz Bali, by Hyatt.
