The Westin Resort Nusa Dua, Bali proudly unveils the second chapter following the successful debut of its culinary storytelling series, Travelogues of the Archipelago, inviting guests on a journey through Indonesia's rich gastronomic landscapes. Taking place on 21 and 22 August 2026 at the beachfront Ikan Restaurant & Bar, where this chapter shines a spotlight on the bold and vibrant flavors of Minangkabau cuisine, curated by acclaimed guest chef Fernando Sindu from Salira, Jakarta.

 

Designed as an immersive dining series, Travelogues of the Archipelago showcases the depth and diversity of Indonesian cuisine through collaborations with chefs dedicated to preserving and reinterpreting regional culinary traditions. Each chapter highlights a different destination and story from across the archipelago, inviting guests to experience the culture of a region through its food.

 

 

For its second chapter, the spotlight turns to West Sumatra, where aromatic spices, slow-cooked techniques, and generations-old recipes have shaped a cuisine renowned throughout Indonesia and beyond. Through a specially curated menu, Chef Fernando Sindu from Salira Jakarta will present dishes inspired by the Minangkabau table, honoring traditional flavors while introducing a contemporary perspective developed through years of culinary exploration.

Bringing the Flavors of West Sumatra to Bali's Shores
At the heart of Travelogues of the Archipelago Chapter Two is a dynamic collaboration between Chef Fernando Sindu of Salira Jakarta and Chef Raviel Sidik, Head Chef of Ikan Restaurant & Bar. Together, they present a specially curated à la carte menu that celebrates the rich culinary traditions of West Sumatra while embracing the coastal identity and contemporary approach that define Ikan Restaurant & Bar.

 

 

Chef Fernando Sindu, affectionately known as Nando, brings a unique perspective shaped by his culinary journey across countries and Indonesia's diverse regions. A graduate of the Culinary Institute of America, he refined his craft in New York before returning to Indonesia, where he now leads Salira Jakarta, The Union Group's first restaurant dedicated entirely to Indonesian cuisine. Inspired by extensive travels across the archipelago, Chef Fernando explores the ingredients, traditions, and stories that define each destination, translating them into dishes that celebrate regional authenticity while remaining approachable for contemporary diners. Guided by the philosophy of tepo seliro, or empathy, his cooking reflects a deep appreciation for Indonesia's culinary heritage, making him a fitting collaborator for Travelogues of the Archipelago's exploration of Minangkabau cuisine.

 

Joining him is Chef Raviel Sidik, whose passion for Indonesian flavors and locally inspired cuisine has helped shape the culinary identity of Ikan Restaurant & Bar. Known for his thoughtful interpretation of Indonesia's coastal heritage, Chef Raviel collaborates with Chef Fernando to create a menu that bridges tradition and innovation, resulting in a dining experience that feels both authentic and contemporary.

 

Together, the two chefs have crafted a menu that showcases some of Minangkabau cuisine, including Kaleo Domba Muda, Ikan Bakar with Asam Padeh Sauce, Rendang Series, Itiak Lado Mudo Bukittinggi, and Udang Bakar Pariaman.

 

 

This exclusive collaboration invites guests to discover the depth, complexity, and cultural richness of Minangkabau cuisine against the backdrop of Bali's southern coastline, creating a memorable culinary journey that celebrates the spirit of the Indonesian archipelago.
