From Sydney’s iconic harbour to the coast of Seminyak, Seasalt at Alila Seminyak welcomes Executive Chef Tyson Gee of Park Hyatt Sydney for the latest edition of its Seasalt & Friends series. Taking place from April 10 to 12, 2026,Chapter 10 unfolds as a three-day collaboration that brings together two coastal dining destinations, united by a shared philosophy of ingredient-led cuisine, advanced techniques, and culinary craftsmanship.
Designed as an immersive culinary exchange, the collaboration reflects Seasalt’s signature approach to coastal dining, where responsibly sourced seafood, Japanese-inspired techniques, and a zero-waste philosophy come together on the shores of the Indian Ocean. It also introduces the contemporary, produce-driven style of Park Hyatt Sydney, known for its relaxed yet refined approach to all-day dining overlooking Sydney Harbour.
Chef Tyson Gee brings a globally informed perspective shaped by his experience across Canada, Australia, Thailand, and Malaysia. Throughout his career, he has championed sustainability and locally sourced ingredients, combining technical precision with a thoughtful, ingredient-led approach.
His presence at Seasalt Seminyak highlights a natural synergy between the two kitchens, where creativity and environmental responsibility go hand in hand.
The collaboration begins with Sunset Hour on April 10 and 11, champagne, and wine experience set against Seminyak’s golden hour. Guests are invited to explore a series of curated tastings, thoughtfully paired with beverages and accompanied by live entertainment.
The event is followed by Dinner, with highlights including cured yellowtail with coconut citrus and belimbing, chargrilled calamari with smoked bacon XO, and braised clams with smoked soy and salted plum togarashi. Framed by the open-air elegance of Seasalt Seminyak, the experience captures the essence of both destinations: Sydney’s polished harbour dining and Bali’s relaxed coastal energy.
On April 12, the collaboration culminates in a special edition of Seasalt’s Sunday Coastal Brunch, where Chef Tyson Gee’s signatures are woven into the restaurant’s format of fresh seafood selections, live stations, and à la carte dishes served to the table. Dishes such as crisp tuna tartelette with dashi jelly, blue crab omelette with chili oil and herbs, and river prawn with chili jam and sauce américaine highlight the chef’s expressive style, while a single origin chocolate s’more is a playful nod to his Canadian roots.
These are complemented by Seasalt’s signature dishes, including Wagyu short rib with Kalimantan black pepper, seafood tempura, and laksa with octopus and vermicelli, creating a menu that is both expansive and grounded in seasonality and craft.

Sunset Hour & Dinner experience will take place on April 10 and 11, 2026 from 5 PM to 10 PM, while the Sunday Coastal Brunch will be held on April 12, 2026 from 12 Noon to 4 PM, priced at IDR 650,000++ per person.
