Carbón Opens at Alaya Suites Ubud

Forged in Jakarta and shaped by the bold culinary traditions of Latin America, Carbón arrives in Ubud with a more intimate concept, designed to complement the relaxed rhythm and natural surroundings of Ubud. Developed in partnership with Alaya Group as part of the new Alaya Suites Ubud on Jl. Raya Pengosekan, the opening marks MDA Restaurants’ continued growth beyond Jakarta, introducing one of its signature concepts to Bali’s renowned hospitality landscape.

While grounded in the same culinary philosophy as Carbón Jakarta, the Ubud outpost presents a more focused, seasonal expression of the brand. In contrast to Jakarta’s broader menu, Carbón Ubud is shaped by its location, placing greater emphasis on locally available ingredients and produce at their peak. The kitchen also explores the natural affinities between Mexican, Peruvian and Indonesian cooking, from their shared use of chilli, corn and cacao to tropical fruits, herbs and fire—creating a menu that feels both connected to Carbón’s roots and distinctly at home in Ubud.

“Carbón Ubud is not about replicating Carbón Jakarta. It’s about reinterpreting the brand through the lens of Ubud,” says Andri Dionysius, Chef Patron of MDA Restaurants. “We've created a menu that feels true to Carbón's identity while embracing a more relaxed pace of dining. The setting is more intimate, the menu more focused, but the philosophy remains the same: great ingredients, careful technique, and the confidence to let the food do the talking."

A highlight of the experience is Carbón Ubud's tasting menu, offering guests a curated journey through the restaurant’s fire-led cuisine. Each chapter of Carbón Ubud culinary journey will be released as a new volume that showcases signature techniques, and the balance of flavors that defines the kitchen. Guests may also choose from an à la carte menu featuring Carbón favorites alongside dishes created exclusively for the Ubud location, complemented by a beverage program of classic cocktails, wines, and thoughtfully crafted non-alcoholic pairings.
