
Ambar Ubud Bar at Mandapa, a Ritz-Carlton Reserve presents Spirits of the Ubud Jungle, a two-day collaborative cocktail event celebrating the intersection of local culture, sustainability, and contemporary cocktail innovation.
Set within the lush rainforest landscape overlooking the Ayung River, Spirits of the Ubud Jungle brings together an international lineup of acclaimed bars to explore a shared creative journey inspired by Bali’s natural abundance. Hosted by Ambar Ubud Bar and Mandapa, a Ritz-Carlton Reserve, the experience combines foraging and discovery with storytelling-led mixology, encouraging a deeper connection between nature, place, and craftsmanship.
The program reflects a growing global movement toward conscious bartending—where indigenous ingredients, responsible sourcing, and thoughtful techniques shape cocktails that are both expressive and sustainable. Through collaboration and exchange, participating bars will interpret the spirit of the Ubud jungle through their own distinctive philosophies.

CARROTS, Jakarta – Featuring Alvin and Anthony
Nestled in a quiet basement in Jakarta’s Sudirman central business district, Carrots is an intimate cocktail bar serving contemporary, culinary-driven cocktails in a warm, welcoming space. With eclectic décor, a communal table, and just 14 seats, personalized service and connection are central. Carrots is No. 34 on Asia’s 50 Best Bars 2025. Led by mixologist Anthony Luis, the seasonal menu reflects diverse styles and cultural influences. An e-cigs-only policy ensures a full sensory experience.
COA, Hong Kong – Featuring Jay Khan
Named after the machete used to harvest agave, COA is an exciting cocktail bar helmed by industry veteran Jay Khan. In 2025, COA ranked No. 38 on the World’s 50 Best Bars list and No. 17 on the Asia’s 50 Best Bars list. With a warm, inclusive atmosphere, COA champions genuine hospitality and artisanal cocktails, with a dedicated focus on showcasing the depth and diversity of agave spirits.
FURA, Singapore – Featuring Sasha and Christina
Fura, opened in late 2023 on Singapore’s Amoy Street, is a boundary-pushing bar with a sustainable, future-forward ethos. Led by Christina Rasmussen and Sasha Wijidessa, it champions mostly plant-based cocktails and dishes using foraged and micro-garden ingredients—boldly challenging local palates with inventive, eco-conscious creations.
LE CHAMBER, Seoul – Featuring JJ and Lee
Hidden behind a bookshelf entrance, speakeasy Le Chamber is the brainchild of world-champion bartenders Eom Do-hwan and Lim Jae-jin. The 50-seat space features soaring ceilings, leather seating, chandeliers, and live piano music, with book-bound menus offering 200 whiskies, house-made ingredients, and fermented drinks—making celebrity sightings part of the experience.
WORKSHOP 14, Hanoi – Featuring Richard and Cuong
Workshop14 is a highly acclaimed modernist cocktail bar in Hanoi, Vietnam, known for its innovative drinks, serene atmosphere, and unique blend of local heritage with scientific mixology. Ranked No. 84 on the 2025 Asia’s 50 Best Bars extended list and founded by Richard McDonough, Workshop 14 offers a peaceful escape with handcrafted cocktails that utilize hyper-local ingredients and advanced techniques, making it a must-visit spot in Hanoi’s evolving bar scene.

Guest Shifts at Ambar Ubud Bar (Open to the Public)
The guest shifts during Spirits of the Ubud Jungle will showcase a creative Black Box Challenge inspired by Ubud’s natural landscape such as unique plants, roots or fruits aside from each guest bar’s signature cocktails. For the Black Box Challenge, participating bars will be presented with a curated selection of local ingredients and will be tasked with crafting an original cocktail on the spot—guided solely by technique, intuition, and storytelling. Each cocktail will be a one-time creation, reflecting both Bali’s biodiversity and the distinct identity of each bar. Open to the public, these guest shifts offer a rare, immersive look at how place-driven ingredients and creative constraint shape modern cocktail culture.
