Bbasam, the Seoul restaurant that introduced butter-aged pork-belly to Korea in 2023, will open its first international location in Kerobokan, Bali, on 16 October 2026, following a soft opening from 2 October. The Bali restaurant is operated by Kawano Group, the restaurant company behind The Grill, Honzen, Tonton Kumamoto Ramen Bar, and others. Bbasam seats 66 across two floors for friends and family, with window seating upstairs.

Bbasam’s signature cut goes through a 144-hour, two-stage aging process. Pork belly is first dry-aged for 72 hours, drawing out moisture to concentrate its flavor and tenderize the meat. It is then coated in butter and aged for a further 72 hours, sealing it from the air. The result grills crisp at the edge and stays juicy through the middle, rich and toasty, without being heavy.
“People hear 'butter' and 'pork belly' and expect something heavy. The first bite surprises them. Aging in butter doesn't add grease — it gives the meat a deeper, toasty richness while the finish stays clean. That contrast is the whole point of Bbasam” said Gyeo-wool Kim, Owner Chef, Bbasam.
Bbasam chose Bali for its first international location
Bbasam chose Bali for its first international location because of who eats there: travelers and residents from across the world, in one place. The restaurant sits in Kerobokan, between Seminyak and Canggu, two of the island’s busiest dining areas.

“Bali is where the world comes to eat. We wanted a unique Korean table people still talk about after they've flown home,” said Deri Jindhar, Marketing Manager, Kawano Group.

Every cut is grilled at the table by Bbasam’s staff, so each piece is eaten at the moment it’s ready. The menu also includes different meat cuts and stews, all to be enjoyed in BBASAM’s signature way.
