Seasalt at Alila Seminyak continues its signature culinary series with Seasalt & Friends Chapter 11, presenting a new collaboration with WAATU. Set along the coastline of Seminyak, this latest chapter brings together two iconic dining concepts in a shared exploration of ingredient-led cuisine, modern techniques, and expressive flavor profiles.


The collaboration reflects a natural alignment between Seasalt’s coastal dining approach and WAATU’s contemporary, globally influenced cooking style. Rooted in seasonality and craftsmanship, the experience offers a refined yet approachable interpretation of modern dining by the sea.

 


Designed as a curated culinary journey, the experience features both a four-course set menu and a selection of à la carte dishes, allowing guests to explore the collaboration through different formats. Each dish highlights a careful balance between precision and creativity, where bold elements are layered with restraint to create depth and clarity of flavor.


This collaboration is led by Chef Lachland Budd of WAATU and Chef Hazwan Hamdan of Alila Seminyak, who bring together their distinct culinary perspectives in a seamless and expressive menu. The menu unfolds through a progression of thoughtfully composed dishes. The experience begins with Beef Tartare, enhanced with kimchi salt that brings a subtle fermented depth to the richness of the dish. It continues with Tuna Usuzukuri, presented with bonito cream, radish, and sake, offering a clean and delicate expression with a refined finish.

 


For the main course, BBQ Mahi Mahi is paired with leeks, sake glaze, and wakame, combining gentle smokiness with coastal freshness. The journey concludes with Bali Cocoa, a dessert of coconut and salted milk caramel, delivering a rich yet balanced finale that highlights local ingredients.


In addition to the set menu, the à la carte offerings further showcase the creativity of both kitchens. This approach allows for a more personalized dining experience, where guests can explore different interpretations of the collaboration while enjoying Seasalt’s signature beachfront setting.


Set within the open-air ambiance of Seasalt Seminyak, the collaboration captures the essence of coastal dining in Bali. The atmosphere blends relaxed seaside energy with understated sophistication, creating a setting where cuisine and environment come together seamlessly. Seasalt & Friends continues to serve as a platform for creative exchange, bringing together chefs and culinary concepts that share a commitment to quality, technique, and innovation.


The Sunset Hour and Dinner experience will take place on May 23, 2026, from 5 PM to 10 PM. The four-course set menu is priced at IDR 800,000++ per person, with additional à la carte selections available during the event.
