Alila Villas Uluwatu unveils the inaugural chapter of “Indonesian Best-in-Class, A Culinary Collaboration Series,” a thoughtfully curated dining journey celebrating the nation’s most acclaimed culinary talents. The series opens with a one-night-only Four Hands Dinner on 17 July 2026 at The Warung, in collaboration with Semaja.

Set against the dramatic cliffs of Uluwatu, this intimate evening brings together Chef Eling Payana of The Warung and the culinary artistry of Semaja, uniting two distinctive interpretations of Indonesian cuisine. Limited to 40 guests, the experience invites diners to explore the richness of the archipelago through a refined multi-course menu shaped by both heritage and innovation.

Semaja is a tribute to Indonesia’s diverse culinary identity, where tradition meets artistry on every plate. Inspired by the archipelago’s timeless culture and vibrant flavours, Semaja reimagines familiar tastes with modern finesse, presenting a dining experience that is both sophisticated and soulful.

At The Warung, Chef Eling Payana has become a respected guardian of Indonesia’s culinary heritage. Through his elevated yet authentic approach, he celebrates the rich traditions of Balinese and Indonesian cuisine while embracing thoughtful innovation. Beyond the kitchen, Chef Eling is also a community leader in his hometown of Kelan Village, reflecting his deep connection to local culture and heritage.
