Anantara Ubud Bali Resort presents Wings & Roots of Payangan, an immersive three-day journey inviting guests to connect with the landscapes, traditions and flavours that define Bali's highlands.

Taking place from 22 to 24 July 2026, the experience brings together conservation, local discovery and gastronomy through a thoughtfully curated programme led by Chef Petty Elliott, one of Indonesia's most respected culinary voices and an author of The Indonesian Table and The Indonesian Vegetarian Table. Joining her are Made Warnata, Director of Spa, Wellness & Recreation, whose deep knowledge of Balinese wellbeing traditions offers guests a meaningful connection to the island's cultural heritage, and Chef Agus Antara of Kirana Restaurant, whose approach to seasonal, locally sourced ingredients celebrates the flavours and agricultural richness of Payangan.
Inspired by the rich natural and cultural heritage of Payangan, the journey begins with a guided foraging experience through the surrounding countryside. Guests will discover indigenous herbs, seasonal produce and traditional ingredients while learning about their role in Balinese wellbeing, culinary traditions and everyday life.

The following evening, the experience unfolds at Kirana with a harvest-inspired dinner celebrating the bounty of the region. Crafted by Chef Petty Elliott and Chef Agus, the menu showcases locally sourced ingredients and the stories behind them, offering a deeper appreciation of Indonesia's diverse culinary heritage.
On the final day, guests are invited to participate in Bali Starling Release II, continuing Anantara Ubud's commitment to protecting one of Bali's most treasured endemic species. The experience reflects the resort's dedication to preserving Bali's natural heritage while fostering meaningful connections between travellers and destination.

The journey concludes with the Harvest to Table Masterclass, where Chef Petty Elliott shares techniques, ingredients and stories inspired by Indonesia's rich culinary traditions, offering guests an opportunity to deepen their understanding of the country's diverse food culture through a hands-on experience.

A renowned food writer, culinary consultant and advocate for Indonesia's culinary heritage, Chef Petty Elliott has dedicated much of her career to documenting and sharing the stories, ingredients and traditions that define Indonesian cuisine. Her latest publication, The Indonesian Vegetarian Table, celebrates the diversity of plant-based cooking across the archipelago, highlighting the important relationship between food, culture and community.
Through both the Harvest Dinner and Harvest to Table Masterclass, guests will experience Chef Petty's passion for local ingredients, seasonal cooking and the preservation of culinary traditions, all of which closely align with the philosophy behind Wings & Roots of Payangan.
