SKAI Bar & Grill invites guests to experience Taste of the Riviera in collaboration with AMICI, an exclusive one-night culinary collaboration celebrating the pleasure of gathering around the table.
Taking place on Saturday, 25 July 2026, from 6PM to 10PM, the evening brings together renowned Chef Alessandro D'Amico, Head Chef of AMICI Bali, and Chef Samuel Barus, Chef de Cuisine of SKAI Bar & Grill, for an endless-flow à la carte dining experience inspired by the Italian and Mediterranean traditions of sharing.
Chef Alessandro builds upon the culinary vision of Chef Enrico Bartolini, the most decorated Italian chef in contemporary gastronomy. His restaurants have collectively earned 14 Michelin Stars. Bringing AMICI Bali’s distinctive modern Italian character to the collaboration, Chef Alessandro will present a selection of handcrafted dishes that celebrate familiar Italian flavours through refined, contemporary execution. Chef Samuel will complement the experience with SKAI’s signature Mediterranean wood-fire cooking, creating a memorable culinary journey that highlights the best of both destinations.

Built around the simple pleasure of sharing good food in good company, Taste of the Riviera invites guests to pass plates across the table, discover new flavours together, and enjoy dishes created to spark conversation. The menu brings together the richness of Italian cuisine and the vibrant, fire-led flavours of the Mediterranean, creating a dining experience designed to be enjoyed together.
Highlights of the evening include Wagyu Tajima Bresaola, Homemade Ravioli with Wagyu Tokusen Oxtail Ragout, and Prawn Umami, alongside seasonal sides such as Grilled Wild Mushroom and Smoked Leek. To conclude the evening on a sweet note, guests can enjoy a selection of handcrafted desserts by Chef Alessandro, inspired by classic Italian flavours and reimagined with a modern touch.
