
In an unprecedented collaboration, Mandapa, a Ritz-Carlton Reserve will travel from the lush landscapes of Bali to the shores of Baja California Sur for an exclusive culinary residency at Zadún Los Cabos, a Ritz-Carlton Reserve, taking place May 8–22. This marks the first takeover between properties within the ultra-luxury The Ritz-Carlton Reserve portfolio, uniting two extraordinary destinations connected by nature, culture, and a profound respect for origin.
This milestone builds on Zadún’s dynamic culinary program, which continues to evolve with immersive dining concepts and hands-on epicurean experiences across the resort. Most recently, the property celebrated the November reopening of HUMO, its signature fire-forward Latin restaurant, debuting a refreshed concept that highlights bold regional flavors and live-fire techniques. Together with its portfolio of distinctive dining venues and workshops, from wine-making to cacao tastings, Zadún has become a destination for guests seeking destination-driven gastronomy.
The residency will showcase Mandapa’s signature zero-waste culinary philosophy, a practice that honors Bali’s abundant landscapes while celebrating sustainability, craftsmanship, and the art of storytelling through food. Guests can immerse themselves in a dynamic lineup of experiences, including hands-on cooking classes, interactive demonstrations, and curated tastings.
For Zadún Los Cabos, the takeover represents a milestone in the resort’s evolution within the Reserve portfolio. By hosting Mandapa, the resort deepens its commitment to global culinary exchange, offering guests rare access to internationally celebrated talent and immersive, cross-cultural dining experiences that extend far beyond the traditional restaurant setting.

At the center of the collaboration is Chef Eka Sunarya, Executive Sous Chef of Mandapa, whose immersive dining philosophy is rooted in community-based sourcing and innovative zero-waste techniques. During the takeover, Chef Eka will present a curated menu showcasing his inventive culinary creations, inviting guests to experience a celebration of flavors and stories crafted with intention and care.
Chef Eka currently leads culinary experiences at Kubu, Mandapa’s signature bamboo restaurant renowned for its intimate ambiance, where he develops dishes that highlight foraged ingredients sourced within a 100-kilometer radius and employ innovative techniques, including sous-vide and other modern methods. Hailing from Buahan Village in Gianyar, Bali, Chef Eka’s culinary journey began in Ubud, where he rose from steward to cook’s assistant, inspired by his mother’s use of indigenous ingredients. His career has spanned international kitchens, including Vаниль Restaurant in Moscow, and key roles at luxury resorts across Indonesia and the Maldives. He returned to Mandapa in 2023, bringing with him a philosophy grounded in sustainability, collaboration with local farmers, and the belief that every ingredient from nature deserves thoughtful care.
