
COMO Uma Canggu proudly announces the final chapter of its 2025 COMO Culinary Odyssey series: the Karangasem Edition, presented in collaboration with the acclaimed Bali Asli Restaurant, from August 14th to September 30th 2025. This meaningful programme invites guests to explore the culinary and cultural heritage of East Bali through the ceremonial dining tradition of megibung.
Originating in the royal courts of Karangasem, megibung was created to unite people through the act of sharing food. Today, this symbolic tradition lives on in rituals, festivals, and now — for a limited time — as an immersive dining experience available for lunch and dinner at participating COMO properties.
The menu, curated by Bali Asli founder and Executive Chef Penelope Jane Williams, offers an authentic journey through East Bali’s flavours and stories. From bamboo-steamed Sidemen red rice to jackfruit curry and barbecued coconut curd, each dish is prepared using regional techniques and locally sourced ingredients. Dishes include be siap mepanggang, where baby Balinese chicken is marinated in traditional spices and grilled over coconut husks; pesan telengis gerang, a smoky parcel of fresh coconut curd, bean sprouts, and dried whitebait; and tapé goreng, a beloved Karangasem dessert of fermented cassava, deep-fried in a crisp sweet batter.

The culinary experience is complemented by a collection of Karangasem-inspired beverages, both spirited and alcohol-free. Bali Beneath the Trees blends arak with native gula pasir fruit and lemongrass for an earthy, herbal refresher. Arsana Negroni offers a bold reinterpretation of the classic cocktail, infused with kaffir lime and ginger. Temple Bloom unites traditional brem rice wine with elderflower and
citrus for an elegant, floral aperitif. For those seeking a non-alcoholic alternative, the Sacred Spring mocktail blends cold-brewed lemongrass, tangerine, and ginger flower syrup — a cooling homage to the region’s sacred waters.
“Karangasem has a rhythm and richness unlike anywhere else,” says Chef Williams. “With every plate and every flavour, we’re inviting guests not just to taste the land, but to understand its spirit,” she adds.
“This edition brings our 2025 Culinary Odyssey to a close with a deep connection to Bali’s cultural roots,” adds Henry Scott, General Manager. “It is a celebration of community, heritage, and craftsmanship — and we are honoured to partner with Chef Williams and Bali Asli Restaurant for this meaningful finale.”

The COMO Culinary Odyssey will return in 2026, continuing its mission to explore the diverse culinary landscapes of the regions COMO calls home.
The Karangasem Edition is available from August 14th to September 30th 2025, by pre-order only. This chapter forms part of COMO’s commitment to sustainability, cultural storytelling, and destination-driven dining. The megibung menu is available for lunch and dinner at COMO Beach Club, priced at IDR 395,000++ per person.
