On Friday, 8th August 2025, What's New Bali was invited to BKeto Restaurant for the “Freedom and Fusion” dining event, a prelude to the main Independence Day celebration coming up on 17 August. It was a night that brought together three of Blue Karma’s restaurants in one festive collaboration, blending the spirit of Indonesia’s independence with a playful twist of culinary artistry and culture. Here's our story of this wonderful night of feast and fun.

The air buzzed with excitement at BKeto Restaurant, the eclectic dining space of Blue Karma Dijiwa Seminyak. The breezy, artsy space glows in warm light, and the sound of vibrant background music sets the tone for an unforgettable evening.
The dining experience itself was a delicious mystery. Each course arrived without introduction, inviting us to experience the flavors without any preconceived notions. The starter was a harmonious balance of tender freshness, creamy richness, and a sweet, earthy surprise that instantly opened our appetite. The main dish was grilled to perfection, smoky, delicate, and paired with crisp accents and a sauce that had us chasing the last drop. Dessert was a show in itself, served directly on the table over a special paper mat, sweet, tangy, crunchy, and creamy all at once, with berry and vanilla notes dancing on our palate.
Between courses, the restaurant's garden area transformed into a stage for Bali’s cultural treasures. Four traditional dances unfolded before our eyes, from the elegant Panyembrana Dance to the precise Kebyar Duduk, the romantic Oleh Tamulilingan, and the lively Joged Dance. Each performance brought a different energy, weaving history, art, and emotion into the night. The performers’ intricate movements and vibrant costumes drew us in completely, making it hard to decide which was more captivating, the food or the dance!
And then there was the cocktail, a fine marriage of sweetness with just the right hint of arak, embodying the “fusion” theme perfectly. Sipping it between bites and performances, we felt the night blur into one seamless celebration of taste, tradition, and togetherness. If this was just the pre-event, we can only imagine how spectacular the main Freedom and Fusion night will be.
