Fire at W Bali – Seminyak unveils a bold new chapter with the relaunch of its dining concept, inviting guests to discover a transformative culinary experience where every dish is shaped by the elemental power of wood, fire, and ash. 


As a modern grill, the new concept focuses on delivering top-tier quality comfort food, elevated by time, depth, and layered complexity. To complement this evolution is the addition of a sleek new Wine Wall, showcasing a meticulously curated, special limited-offer selection of wine bottles, handpicked to pair seamlessly with the smoky nuances of the menu.

 


"Fire is one of the most powerful elements of cooking. It transforms ingredients in ways that bring out incredible depth, texture, and character," says Steven Peter, Executive Assistant Manager of B&F and Culinary. "With this new concept, we wanted to create a dining experience that celebrates transformation in every sense—from ingredient to plate, and from meal to memory."


This entirely reimagined menu is the result of a powerful creative collaboration between Senior Sous Chef I Made Sember and French Executive Sous Chef Jules Winckler, bridging deeply rooted local passion with global contemporary techniques.


While Chef I Made Sember is the culinary heart of W Bali and has shaped the kitchen since the resort's pre-opening, he works in tandem with Chef Jules Winckler, who brings a refined yet bold perspective to the grill rooted in international experience and precision.

 


Together, they have crafted an entirely new menu that showcases transformation through carefully layered flavors and techniques. Signature highlights include:


• The Butcher’s Block, a curated selection of premium, special-cut meats cooked over open fire.
• Reef Fish Crudo, with yuzu, smoked crème fraîche, and seaweed crackers. 
• Heirloom Tomato Salad, featuring green goddess dressing, chilled tomato consommé, and basil. 
• Dry-Aged Duck, combining crispy duck breast, potted leg confit, and sautéed kale. 
• Dark Chocolate Soufflé, served with spiced chocolate, sorbet, and cocoa nibs. 
• Charred Lime Pie, finished with lime gel and Swiss meringue.


Guests are invited to immerse themselves in this transformative dining experience daily. Fire is open for Lunch from 12:00 PM to 5:00 PM, and for Dinner from 6:00 PM to 11:00 PM.
