Crisp mountain air, rich volcanic soil, deep lakes, and a culture as ancient as time shaped the food culture of Bali's most intriguing region, Bangli. From October to December 2026, Sawah Terrace at Mandapa, a Ritz-Carlton Reserve, revives nearly forgotten heritage dishes from Bangli as part of its Untold Flavors of Bali series.
A unique region, the only landlocked area in Bali, Bangli’s culinary heritage shaped by the majestic lake, fertile soil, and traditional preservation techniques. The menu features the following:

Urutan Babi, pork sausage
Urutan Babi is a traditional pork sausage made with minced pork and a rich spice mix of galangal, ginger, turmeric, and coriander, encased in natural pork intestine and slowly smoked on a grill for about 4 hours.
The smoking technique is unique to the region, an ancient recipe passed on through generations, a versatile dish best enjoyed with rice and vibrant sambal embe.
Be Jair Menyatnyat, Balinese fish stew
This dish is inspired by Be Jair Menyatnyat, which originates from Kintamani, a region known for its lakeside living. It features fish that is fried and cooked with a blend of Balinese spices, including ginger, galangal, and turmeric. The term ‘Nyat-Nyat’ refers to a unique cooking method in which the spices are simmered down to create an intensely flavorful sauce.

Jaje Abug, dessert
A traditional Balinese sweet from Bangli, passed down through generations, often enjoyed together in ceremonies such as Galungan and Kuningan. Made with humble ingredients, this sweet is layered with sticky rice, coconut, and palm sugar.
