Indonesia’s Independence Day is often celebrated through food, family gatherings and familiar traditions that bring people together. This year, InterContinental Bandung Dago Pakar marked the occasion with Kenduri Rasa Nusantara, a special culinary collaboration with Chef Uky of Dailah Sajian Kontemporer at Damai Restaurant.

Held from 15–17 August, the special dining experience brought together a generous selection of Indonesian dishes, showcasing flavours from different regions of the archipelago in one buffet spread. Rather than focusing on a single regional cuisine, Kenduri Rasa Nusantara offered a chance to explore the diversity of Indonesian cooking in one sitting.

The menu featured a mix of familiar regional favourites and contemporary interpretations, including Paru Balado, Gulai Tunjang and Sayur Kapau from the Sumatra selection, alongside Ikan Mangut, Tongseng Kambing and Kering Tempe representing Java. Other highlights included Urab Bali, Bebek Sambal Hitam and Ayam Panggang Taliwang, bringing even more regional character to the spread.
The Nusantara theme continued through the dessert selection, with Indonesian favourites such as jajanan pasar, Dadar Gulung, Martabak Manis Bandung, Cendol Pudding and Durian Pancake, alongside more contemporary sweet creations.

What made the experience particularly fitting for Independence Day was its emphasis on the variety of flavours found across Indonesia. Guests could move from one regional dish to another, discovering different spices, ingredients and cooking traditions while enjoying the relaxed setting of Damai Restaurant.

Kenduri Rasa Nusantara was also part of InterContinental Bandung Dago Pakar’s wider Independence Day celebrations for in-house guests. From 15–17 August, the hotel brought a familiar sense of Indonesian Independence Day festivities to the property with traditional games including sack races, tug-of-war and the classic pencil-in-a-bottle challenge.
Families staying at the hotel could also enjoy the property’s recreational activities, from ATV and E-Bike rides to Mini UTV and the Kids Playground at Kingdom, adding an outdoorsy element to the long-weekend stay.
With its combination of traditional games, family activities and a celebration of Indonesia’s culinary heritage, the Independence Day programme offered guests a relaxed way to mark the occasion. At the heart of it, Kenduri Rasa Nusantara provided a delicious reminder of just how diverse Indonesian cuisine can be—bringing the flavours of the archipelago together around one table.
