
Indonesia Returns to Germany’s Three-Michelin-Star Restaurant,
Making Chef Regeneration Its Main Mission
A restaurant takeover at Schwarzwaldstube, Hotel Traube Tonbach brings together Indonesian chefs, world-class culinary institutions, and industry partners in an effort to strengthen Indonesia’s gastronomic diplomacy.
Chef Degan Septoadji returns to lead a mission promoting Indonesian flavors at Schwarzwaldstube, the three-Michelin-star restaurant at Hotel Traube Tonbach, Germany, from 5–10 August 2026. Over six days, Indonesia will not only present a series of gala dinners and cooking classes, but will also carry a mission to regenerate Indonesia’s next generation of chefs and document the culinary journey of the Nusantara for the world.
This mission is part of Indonesia’s efforts to build international recognition for Nusantara gastronomy through collaboration with one of the world’s most prestigious culinary institutions.
This year’s concept continues to highlight a dining experience rich in cultural storytelling, showcasing flavors from various parts of the Nusantara across four evenings of gala dinners. In addition to the gala dinners, this year’s promotion also features two cooking class sessions, giving guests the opportunity to learn firsthand how to prepare Indonesian dishes that they can recreate at home, while exploring the cultural stories behind each recipe.

This regeneration is the key distinction of this year’s mission. Beyond introducing the flavors of the Nusantara, Chef Degan is using this international platform to create learning opportunities for the next generation of Indonesian chefs, while demonstrating how gastronomy can serve as a bridge for cultural exchange, professional collaboration, and diplomacy between nations.

This year, Chef Degan is not traveling alone. He is bringing the next generation of Indonesian chefs to gain hands-on cooking experience at one of the world’s finest restaurants. As a senior culinary figure and leader who has demonstrated his dedication for nearly four decades, Chef Degan has a vision of passing the torch to the next generation of Indonesian chefs. Every culinary promotion mission he leads is not only aimed at introducing Indonesia’s rich gastronomy to the world, but also serves as a platform for learning and regeneration for young chefs.
This time, Chef Degan will lead a team consisting of five members from Jakarta, namely Chef Theo (Setyo Widhyarto), Chef Norman Ismail, Chef Mili Hendratno, and Nike Kurnia as the program host. This year’s mission brings together senior Indonesian chefs, culinary talents from different generations, and four Indonesian chefs currently pursuing their careers in Germany in a collaboration that reflects the regeneration and global network of Indonesian gastronomy.

This initiative is also part of Behind The Chef’s commitment to ensuring the continued promotion of Indonesian cuisine internationally through the regeneration of Indonesian chefs.
