Honoring Indonesia's Independence with the Flavors of Nusantara

In celebration of Indonesia's Independence Month, Bel Étage at The St. Regis Jakarta proudly presents Jamuan Nusantara, a special brunch experience honoring the richness of Indonesian culinary heritage through refined flavors and contemporary craftsmanship.

Travelling from the highlands of Ubud to the heart of Jakarta, Chef Bayu Retno Timur of Mandapa, a Ritz-Carlton Reserve takes the helm of Jamuan Nusantara. Since joining the award-winning resort in 2015 as Chef de Cuisine, he has risen through the ranks to become Executive Chef, overseeing its acclaimed culinary experiences. With over two decades of experience in luxury hospitality, Chef Bayu is also recognized for representing Indonesia at the prestigious Bocuse d'Or Asia-Pacific 2018.

Showcasing his contemporary interpretation of Indonesian cuisine, Chef Bayu presents a menu that draws inspiration from some of the archipelago's most beloved flavors and timeless Indonesian classics. Signature creations include Rujak, featuring red snapper ceviche with spicy rujak dressing, pomelo and young mango salad, finished with tomato sorbet; Kare Kuning, a scallop toast paired with fragrant curry sauce, red capsicum marmalade, and kare leaf oil; Soto Betawi, an indulgent interpretation of the classic Jakarta specialty with seared foie gras, beef short ribs, and an aromatic coconut broth; and Rendang, slow-roasted beef tenderloin with rich rendang sauce, pickled vegetables, organic Balinese mansur rice, and corn fritter. Each dish pays tribute to the diverse flavors that define Indonesian cuisine.

As Indonesia celebrates its Independence Day, Jamuan Nusantara brings together the stories, flavors, and traditions that have shaped the nation's rich culinary identity. For one special weekend on 15 and 16 August, guests are invited to experience Chef Bayu Retno Timur's interpretation of beloved Indonesian dishes, where time-honored recipes and local ingredients are reimagined in tribute to the diversity, creativity, and enduring spirit of Nusantara.
