Where water meets fire, two distinctive Chinese dining destinations exchange flavours, philosophies and signature creations from Jakarta to Ciawi.

Jade River Chinese Restaurant at Pullman Ciawi Vimala Hills marks its first anniversary with Red Hot China, a six-day culinary collaboration with Jakarta’s Apollo Wu from 30 October to 6 November 2026. Bringing together two distinctive restaurants from different destinations, the collaboration invites guests to experience a family-style menu created through a two-way exchange of signature dishes, culinary perspectives and creative energy. The collaboration will also extend across both restaurants, giving Jade River’s creations a new stage in Jakarta while bringing Apollo Wu’s signature flavours to Ciawi. It is less about putting two menus side by side, and more about seeing what happens when two culinary identities collide.

WHEN WATER MEETS FIRE

Jade River embodies the element of water, reflected in its focus on premium seafood and its reputation for fresh seafood selections. True to its name, this connection flows into the restaurant’s river-inspired concept at Pullman Ciawi Vimala Hills, shaping a dining identity that is both distinctive and deeply rooted in its surroundings. Meanwhile, across the culinary spectrum, Apollo Wu brings the element of fire, with its custom-built Apollo BBQ Oven at the heart of its culinary identity. Built to reach extreme temperatures, the oven harnesses the intensity of fire to create the signature smoky char and melt-in-the-mouth tenderness that define Apollo Wu’s Cantonese-inspired BBQ roasts.

For Red Hot China, Jade River and Apollo Wu bring together a family-style menu designed around contrast, craftsmanship and discovery. Jade River’s selection includes Pumpkin Fish Maw Soup with Dried Scallop, Steamed Soon Hock Fish Fillet topped with Minced Duck and Caviar, and Crabmeat Ball with Prawn Bubble Crumbs and Avocado Mayo Sauce. The extended menu adds Coffee Pudding with Potato Sweet, creating a finale that moves away from convention while keeping the spirit of Chinese-inspired dining intact.

Apollo Wu enters the exchange with its signature Forbidden Black Duck, alongside Szechuan Spicy Chicken Stir Fry, Dragon X.O. Fried Rice, and Mango Cream with Pomelo. The selection reflects Apollo Wu’s broader culinary philosophy of transforming tradition through controlled flame, innovation and craftsmanship. Its signature Forbidden Black Duck is a dry-aged premium golden duck, marinated and slow-roasted over charcoal and applewood before being finished with freshly shaved Yunnan truffle, truffle bao and condiments.
