The Langham, Jakarta invites guests to embark on a gastronomic discovery with A Journey Through France at ALICE by Tom Aikens—a thoughtfully curated dining experience that brings together the rich stories, traditions, and flavours of France’s diverse regions throughout the year. This special menu is available daily for dinner, starting 5 January 2026.

 

Inspired by France’s vibrant gastronomic heritage, A Journey Through France showcases signature specialties from 12 regions across the country. Each dish reflects the character, culture, and culinary identity of its origin, ranging from comforting classics to refined regional favourites. Familiar French flavours are elevated through modern techniques, premium ingredients, and thoughtful presentation, allowing guests to travel from region to region in one seamless dining experience.

 

“A Journey Through France is about storytelling through food,” said Executive Chef Jeremy Jouan. “Each dish represents a place, a memory, and a tradition, allowing our guests to explore France beyond the familiar.”

 

The journey begins in Lyon and the Rhône-Alpes, widely regarded as the heart of traditional French cuisine. Guests are invited to experience authentic flavours through signature specialties celebrated for their rich, robust, and comforting character. Highlights include Salade Lyonnaise, a classic French bistro starter that balances simple yet hearty ingredients; Potage Lyonnais, a velvety roasted pumpkin soup offering warmth and depth inspired by Lyon’s soup heritage; Poulet aux Morilles, aromatic roasted chicken served with a morel mushroom cream sauce and pilaf rice; and Tarte à la Praline de Lyon, a pink sugar-coated almond tart paired with pink praline ice cream—an indulgent yet elegant finale that captures Lyon’s sweet-toothed charm.

 

Each month will spotlight a different region, underscoring the importance of seasonality and regional authenticity in French cooking:

 

-January–February: Lyon & Rhône-Alpes

-April: Burgundy (Bourgogne)

-May: Provence (Provence-Alpes-Côte d’Azur)

-June: Bordeaux & Aquitaine (Nouvelle-Aquitaine)

-July: Alsace

-August: Normandy (Normandie)

-September: Brittany (Bretagne)

-October: Champagne

-November: Périgord (Dordogne, Nouvelle-Aquitaine)

-December: Basque Country (Pays Basque, southwest France)

 

 

Set within ALICE’s warm and inviting ambience, A Journey Through France is ideal for both casual gatherings and celebratory occasions, offering a refined introduction to the depth and diversity of French regional cuisine.

 

The Lyon and Rhône-Alpes edition of A Journey Through France is available for dinner from 5 January to 18 February 2026. The four-course set menu is priced at IDR 638,000++, including a glass of wine, with à la carte selections also available.
